New School Foods is a pioneer in plant-based seafood & meat alternatives, and makers of the world's first plant-based salmon filet that looks, cooks, tastes & flakes like the real thing. Their mission is to accelerate the transition to a more sustainable food system by producing no-compromise seafood and meat alternatives that replicate the same taste, texture, cost, and cooking experience. New School Foods has spent 4 years developing a novel production process that is purpose-built for creating whole-cut seafood & meat alternatives. Their muscle fiber and scaffolding technology, which is based around Directional Freezing, creates a product that mimics the micro-structure of animal muscle tissue in order to deliver a more authentic texture & mouthfeel. Their patented process yields a product that is sold raw, and that transitions upon cooking - just like meat and seafood does. This allows for a more authentic & familiar cooking experience. All the steps in New School’s novel production process use off-the-shelf equipment for maximum scalability and cost-effectiveness.
